Please watch this interview with Mark Bittman from Cooking Up a Story. Part II is more interesting than Part I but you can watch both if you want. Bittman brings up the idea that right now the American diet is way too slanted towards meat and processed food as opposed to vegetables. This is not a new idea, but he speaks eloquently. I like his point that it's not about whether you eat a McDonald's hamburger or some gourmet hamburger, it's whether you are eating a hamburger rather than a head of broccoli. As my friend Gary can attest (having gone on a mostly hamburger diet in the month of August), if you want less of a gut, cut down the burgers and get into some plants.

I couldn't listen to the video (no comments about my digital media skills, please), but I endorse the more vegetables (and fruit) approach over the usual American dynamic of self-denial and self-indulgence. As the Hebrew scripture urges (Psalm 118.24), when it's speaking in King James English: This is the day which the lord hath made; we will rejoice and be glad in it. Find the things that truly bring us (not just atomistic me) joy and gladness, and cultivate them. We can still sometimes enjoy hamburgers, of course. We'll enjoy them more, in fact, when we eat them with a good helping of vegetables and and in the knowledge that our eating habits support a better world for others, too.
